This chili recipe will feed 6-8 hungry adults, or will give you enough leftovers to freeze and reheat on a day you're too busy to cook. It goes very well with cooked rice, a side salad, or with garlic bread to dip into your bowl.

4 large carrots
4 stalks celery
1 large onion
2 cups bell peppers
2 cloves garlic
2 tbsp chili powder
1 tsp cumin
1 tsp dried oregano
1 (28 oz) can tomatoes
1 (5 1/2 oz) can tomato paste
1 tsp granulated sugar
1 tsp salt
1 large bay leaf
1 tsp or more of cayenne pepper (Optional)
2 (14 oz) cans red kidney beans

Oh, I did make a couple of changes. I used honey instead of sugar and chicken instead of the beef.

This chili bears a striking resemblance to yummilicious Vegetable-Beef Schili. ;-D

I have astigmatism, and when I read it, I wasn't sure if it was a typo, or my eyes...
BTW, You are funny and a little "Schili". :P
Then I use my vacuum sealer (which is working again, yay!) and I package up the left overs. Then when we want Chili again, I just put a bag in a pot of boiling water, and in no time, its hot. Then all you do is cut the bag open with scissors and fill up the bowls. And, since you're only boiling the bag in water, you have no pot to wash! (Double bonus). ;)
