In the mood for something sweet and chewy? Try this recipe for Quick Chewy Cuppa Cake!

It's not quite a sponge cake yet not like a brownie texture either. Light and just sweet enough to satisfy the sugar craving; just chewy enough to calm the need to feed without going overboard.

Step 1: Ingredients

4 Tbl sugar
3 Tbl butter
1 egg
1 splash vanilla extract
4 Tbl all-purpose flour
1/8 tsp baking powder
3 Tbl milk
3 Tbl of candy bits, nuts, colored jimmies, etc. (*optional)
A few drops of food coloring (*optional)

*Note:See last step for Chocolate Cake

Step 2: Additional Things You Will Need

Some extra large Coffee Mugs or Bowls
Small Mixing Bowl
Measuring Spoons

Step 3: Make Your Cake Batter

Combine flour and baking powder in cup.

In a small bowl cream together the sugar and butter. Add the egg, and then stir in the vanilla.

Add to the flour mixture in cup and mix well. Stir in the milk until batter is smooth.

Add food coloring if desired.

Stir in any candy bits (i.e. red hots) or decorative pieces, if desired.

Step 4: Cook and Decorate

Microwave on high for 2 minutes, test with a cake tester.

Continue to microwave in 15 second intervals up to 1 minute more. The longer you microwave it the chewier your cake will become.

Let cool and decorate in the cup for gift giving or tip cake out onto plate, decorate or dust with powdered sugar.

I had some pie filling left over from my Valentine Cheese Cake instructable and spooned some over the cake on the plate, added some whipped cream, a cherry and it was very tasty!

For Chocolate Cake

In mug mix 4 Tbl Flour, 4 Tbl Sugar and 2 Tbl Cocoa. Add 1 Egg, 3 Tbl Milk, 3 Tbl Oil and a splash of Vanilla. Mix well. Stir in any additions like chocolate chips, nuts, etc. Microwave for 3 minutes and let cool. Decorate as desired.

    This came out fantastic! A bit flour-y, but I think I didn't mix it well enough. I made this for my mum and brother, so I smothered it in chocolate sauce (they love it). In it I put some Christmas sprinkles as well, to make it festive. It also kind of slouched on itself when I dumped it out of the mug, which gives it a quirky kind of look.

    P.S. I think the photo came out sideways, sorry about that.


    I love it! Mmmmm I made them vegan (left out the egg and used soy milk) and it was delicious!

    Now I'm hungry again. Those look wonderful.


    I tried the chocolate one. Its much better than what you would expect to come out of your microwave.

    Yes they are pretty tasty BML just perfect for a late night munchie attack.

    They are perfect for that. I never imagined baking something in the microwave before. If you have ever put bread or pizza in the microwave, you know how nasty it gets when it comes out (I hate spongy pizza). I suppose because of the spongy nature of the cake, the microwave doesn't do much to make it bad. I will definatly make microwave cake again!

    Thanks Donaldhrtc - I guess it comes not being allowed to play with my food as a child, now I play with it all the time.

    Why does your stuff look so much nicer than the others? You must be putting in a lot of time and hard work to look this good!
