I think I've found my new favourite Avocado Toast with a twist. It's completely plant-based and there are no animal products in this. The twist is Roasted Red Pepper Hummus, topped off with sliced avocados, tomatoes, fresh basil, salt and avocado oil. I love avocado toast with egg but it's so heavy for me. I can manage to eat half of one piece and I'm stuffed because the egg and avocado are high in calories. So I've managed to make a toast that is a lot lighter, healthier and vegan!

I'm also trying to get off white carbs but it is not easy! Sometimes I get a real hankering for white pasta or bread (I've been raised off that stuff). However, since this toast is on rye bread, the rye is a great 'transitional' bread for me to whole wheat. For this recipe, I'm using a delicious Roasted Red Pepper Hummus from Pacific Foods. It's so good and flavourful. The packaging is also resealable and comes in a tetra pack that you can recycle. Also, I'm using avocado oil by Chosen Foods along with some fresh organic produce. This is such an easy recipe that there's no excuse to give it a go if you want to make it! Takes less than 15 minutes to whip up.

Step 1: INGREDIENTS

SERVES 1 | PREP TIME 10 MINS | COOK TIME 5 MINS

  • 2 slices of rye bread
  • 1/3 cup of organic grape tomatoes sliced
  • 1 organic avocado sliced
  • 4 tbsp of roasted red pepper hummus
  • 1 tbsp of avocado oil
  • Salt to taste
  • 2 tbsp of fresh basil

Required: Frying pan for toasting

Step 2: ​INSTRUCTIONS

  1. Brush both slices of your bread with some avocado oil. In a flat pan set on medium heat, lay both slices into pan. Toast for 2 mins each side and remove.
  2. Spread hummus onto each piece of toast. Layer on the sliced avocados. Top off with tomatoes and fresh basil. Season with salt to taste. Enjoy!
