Rainbow Cupcakes in a Jar

Step 1: What You'll Need

Preheat oven to 350f

What you'll need:

1 boxed white cake mix
1 can of white frosting
variety of Wilton icing colours
12 125ml (4oz) canning jars
Sprinkles

Step 2: Step 1:

Make the white cake as per the instructions on the box. Then divide the cake mix up into portions (you don’t have to be exact). Add colouring to the cake mix. I used: No Taste Red, Lemon Yellow, Teal, Royal Blue and Violet (most of the colours of the rainbow).

Step 3: Step 2:

Add about 1 tsp of each colour into the canning jars. Place the canning jars on a cooking sheet with about 1/4″ of water on it. Bake in the oven at 350f for 25-30 minutes.

Step 4: Step 3

Remove from oven and let them cool completely.

Once cooled remove the tops of the cupcakes to make room for frosting. Ice the cakes with the frosting and top with sprinkles.

Step 5: Enjoy!

About how many of the 4oz jars would you say a box of batter would make? I plan on making these for a friend's going-away party in the colors of his new college, but I don't want to end up with too much left-over batter.

I made them too! I added a TON of dye and they came out super bright and pretty!

The only problem was, I couldn't find glass jars, so I had to make them the traditional way. This was nice, though, because it dyed the white wrapper the colors of the cupcake! Brought them to school and everyone adored them!

These look great. In the past, i have put too much dye in stuff and you can actually taste a bitterness. I will have to retry. How did you fill the center with icing like that?

Why use the colored frosting in the batter instead of food coloring? What does that do for you?

The icing colours are food-colouring ... I think Wilton markets them for colouring frosting but they can be used to dye other food products.

Did you grease the jars first?

I didn't grease the jars. I thought about it, but seeing as they don't need to come out of the mold easily (using a spoon to scoop and eat), and you want the rainbow effect to be visible with no barrier, I decided not to.

They didn't stick much at all.
