I'm doing Raw Till Four for the month of January, so I've been getting a bit more creative in the kitchen with raw ingredients. This recipe is so quick and easy to make. No dehydrator or soaking of nuts necessary! You can have a healthy, raw nourishing meal ready in next to no time!

Raw Turmeric Cauliflower Sushi

I used cauliflower for the rice - can you believe that? Cauliflower! It's such an awesome vegetable. I also used the inside of a young thai coconut. These can be difficult to open - you'll need a cleaver, so I hope you all have one of those! Anyway, I found this tutorial on how to do it, so check it out here. Next you add some ginger and turmeric and blend up the ingredients in a food processor. Turmeric gives it a great yellow colour, but you can leave it out if you wish. Garlic also works really well here, but we have weird dreams when we have garlic, so tend to leave it out if we can.

We used avocado, capsicum, cucumber and salad greens for the inside of our sushi rolls, but you can use whatever you want, or whatever you have in the fridge.

Raw Turmeric Cauliflower Sushi

Step 1: For the Sushi

Things you will need:

For the Sushi:
2 cups of Raw Cauliflower
1/2 a cup of Flesh from a young Thai Coconut
1 tsp of Ginger
1 tsp of Turmeric
3 sheets of Nori
1/2 an Avocado
1/4 of a Red Capsicum
1/4 of a Yellow Capsicum
1/2 a medium Cucumber
1 cup of Salad Greens

For the Dressing:
1 Tbsp of Tamari
1 Tbsp of Mirin
Generous splash of Sesame Oil
1/2 a small red Chilli

Step 2:

Blend the cauliflower, flesh of the young thai coconut, ginger and turmeric in a food processor until well mixed, like a pulp. Place one nori sheet with the shiny side down on a sushi roller matt. Add a third of the mixture to the nori sheet (there is enough for 3 nori rolls) and cover most of it, leaving about one inch at one end so you can roll it up properly without stuff falling out.

Step 3:

Then place the avocado, red capsicum, cucumber and salad greens in the middle. Then roll it up! Can take a bit of practise to get a nicely rolled sushi! Then slice it up and eat it!

Step 4:

To make the dipping sauce add everything into a small ramekin and serve with the sushi.
