Step 1: Ingredients
I love this recipe because its simple, fast, delicious and healthy
You will need:
Half an avocado
Some onion if you want
Homemade basil pesto (I'll post a recipe for this too)
Optional root vegetable for grating on top
(I used a turnip and a beet)
Step 2: Zucchini Noodles!!
Cut the ends off a zucchini, wash. Then with a vegetable peeler peel the skin off then shave the zucchini into a bowl. These are your noodles :) you can cut up the center with the seeds and use it in your sauce or save it for later.
Step 3: Sauce
Chop the avocado, tomato and onion. Toss them with 1-2 tablespoons of basil pesto and one splash of balsamic vinegar. Then grate some of the beet on top.
Or if you have a food processor you can blend them together into a sauce.
