Delicious Raw Tacos (or "Rawcos") are easy to make and a great, healthy alternative to traditional tacos. All of the ingredients are vegan, gluten-free and completely raw. Nothing is cooked.

You Will Need:

Romaine hearts

Raw Cashews

Raw Sunflower Seeds

Raw Walnuts

Chili Peppers

Tomato

Red Onion

Celery

Bell Peppers (Green, Yellow, Orange & Red)

Optional: Corn, Cucumber or other vegetables

Step 1: Soak Cashews

To make the sauce for your Rawcos you will need to soak the cashews overnight. Place them in a glass container, cover with water and then wait for them to swell up and soften.

Step 2: Make Sauce

Once you have soaked your cashews you next have to blend them until smooth.

For about 1 and 1/2 cup cashews you will need 4-6 tablespoons of water.

Once blended add a handful of chopped tomatoes and chili peppers.

One chili pepper will make a mildly spicy sauce, two will make it medium and four will make it hot.

Add a dash of Spectacular Taco Spice or just pinch of cumin for added flavour.

Step 3: Mix Filling

Chop up your veggies (bell peppers, red onion, celery, etc) and then add and mix in some walnuts and sunflower seeds. Finish it off with a dollop of the creamy, spicy taco sauce you made earlier and mix.

Step 4: Serve Tacos

Spoon the filling into romaine hearts or leaves, then hold in your hand and eat like you would a regular taco. Yum!
