Here is the latest and greatest video recipe for my cooking channel. This is my Roasted Red Pepper & Shrimp Alfredo. The peppers pair nicely with the shrimp and the classic alfredo. The Alfredo can be used in the traditional fettuccine alfredo as well, that is why I put those ingredients separate. It's been a while but I had a lot going on. Step 1: Ingredients

Ingredients

  • 2 cups cooked fettuccine
  • 2 red peppers
  • Olive oil
  • 3 cups shrimp, peeled and cooked
  • 2 tsp Chilli Spice
  • Salt and pepper to taste.

Alfredo

  • 2 cups heavy cream
  • 1/2 cup butter
  • 3 cloves garlic, minced
  • 1/4 cup parmesan cheese, grated
  • 3 tbsp cream cheese (optional)

Step 2: Roast the Peppers

Heat the oven to 375 degrees, cut the poppers in half and remove all the inside bit including stems. Lay the peppers on a pan cut side down, lightly drizzle olive oil and roast until the tops start to char.

Step 3: Poaching Liquid

While you wait for the peppers to cool, place a pot of water on the stove. Add a sliced up lemon and a generous amount of salt. Bring that to a boil and reduce it to a simmer so it's ready for the shrimp.

Step 4: Skin and Dice

Let the peppers cool and remove all the skin. Dice the peppers and place in a bowl for after.

Step 5: Cooking the Shrimp

Get a ice water bath (ice water) ready. Add the shrimp to the poaching pot you prepared before and cook until the shrimp turns pink, about 5 minutes. Strain the shrimp and add to the ice bath to stop the cooking process. Once cooled, Peel the shrimp and lay aside. They will go in last so they don't overcook.

Step 6: Make the Alfredo

In a Large sauce pot set to medium heat, melt the butter and cream cheese together. Than pour in the cream and bring it too a boil. Season with salt, pepper, garlic and the Chilli Spice.

Step 7: Assemble

Toss the pasta, peppers, parmesan and shrimp in the sauce and stir until well coated than serve.
