Introduction: Rocky Road

Quick easy and delicious are the first things that come to my mind when I think of Rocky Road. It can be made in only 15 minutes and if you have kids is a great recipe to get them involved in the kitchen.

I actually first published this recipe on Flavoursome Delights a while back but think it's so good that I thought I'd share it here too.

Step 1: Ingredients

100g Turkish Delight
100g Marshmallows
50g Macadamia Nuts
50g Cashew Nuts
375g Dark Chocolate

I'd recommend that you should try to cut all of the ingredients to roughly the same size for consistency.

This is my favorite combination but you can add any other kinds of nuts or sweets that you like. As an example, they used jelly snakes to make this with the kids at my daughters day care center as they have a nut free policy.

Step 2: Melt the Chocolate

Melt the chocolate in a large bowl. You can do this in either the microwave or by using a bain-marie.

Step 3: Add Ingredients to the Chocolate

Add all the other ingredients to the chocolate and mix together until they are all evenly coated.

Step 4: Pour the Mix Into a Tray

Once you have finished the mixture, pour it out into a shallow tray. I normally aim to have a fairly even layer about an inch thick.

Now, leave the chocolate to cool and set.


Step 5: Cut Up and Serve

Once the chocolate has set, turn the Rocky Road out onto a board and and cut it up into one inch squares.

You should end up with an attractive mix of ingredients visible through the edges.

It's now ready to eat, enjoy.
