Introduction: Rolo Stuffed Chocolate Chip Cookies
This batch makes about 40 cookies
Rolos need to be frozen or they will leak out of the cookie and will make a big mess
You can add peanuts if you want them
Takes about an hour and 15 minutes to complete the process
These can be made in any kind of cookie you want
1 1/4 cups of unsalted butter, softened.
1 cup granulated sugar.
1 cup packed brown sugar
1 tablespoon of vanilla
3 3/4 cup all purpose flour
2 teaspoons of baking soda
1 teaspoon kosher salt, or just regular salt
2 cups of chocolates chips
Rolos that have been frozen for atleast 2 hours.
Heat oven to 350 degrees. In a large bowl, mix together butter, sugars, vanilla, and eggs until light and fluffy.
After you've mixed the sugars, butters, vanilla and eggs, add in the flour, baking soda, salt and chocolate chips. You may have to add more flour than the recipe calls for to thicken up the dough so it will roll into a ball.
Once you got the dough thick enough, roll the dough into a ball and then flatten in the palm of your hand, place a frozen rolo in the center of the flattened dough and then roll the dough back into a ball.
Spread the dough balls out on a pan and place them into the freezer for 15-20 minutes.
After you have froze them for 15-20 minutes, Bake the cookies for 11-13 minutes or until their light brown, the center will still be soft because of the rolo. Let them cool for about 2 minutes then you can remove them from the cookie sheet and enjoy!
