Introduction: Root Beer Float Cupcakes With Fluffy Soda Frosting!

Root Beer Float Cupcakes with Fluffy Soda Frosting!
These are awesome!

I have a son that is allergic to chocolate.
I have a hard time making a dessert that isn't chocolate...why bother right?
This is the one!

Step 1: Ingredients for the Cupcakes...

Here's the recipe:
Root Beer Float Cupcakes

{12 cupcakes}

1/2 cup butter
1 cup brown sugar, packed
2 eggs
1 dram rootbeer extract (same stuff used in hard candy)
2 tsp root beer concentrate (homebrew)
1 tsp vanilla extract
1 1/2 cups all purpose flour
1/2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1/2 cup buttermilk

Step 2: Directions!

Cream butter and sugar. Add egg and egg yolk and beat.
Stir in extracts. Set aside.
In separate bowl, stir together flour, baking soda, baking powder and salt.
Add dry ingredients to wet.  Pour into lined baking tins.
Bake in a 350°F oven for 20-25 minutes. Cool.

Wow...mine cooked over a bit...I used a tad more flour the next time and they were perfect!
Just not used to the humidity here!  :)
I just pulled the cupcakes out of the pan and used scissors to trim around the cupcake.
Easy.

Try not to eat all of them. yet.

Step 3: Frosting on the Cake!

Add your fluffy soda frosting!

1 cup Whipped topping
2 tbsp brown sugar, packed
1 tsp root beer concentrate
1 tsp vanilla extract

Add a cut striped straw or root beer barrel for the perfect decoration!
Enjoy!

They have a fabulous Root Beer flavor...I want some right now!  :)
