Introduction: SCRUMPTIOUS CARROT CAKE
I made this carrot cake for a birthday once and it really was a hit!
Step 1: Ingredients:
3 large eggs
250g light soft brown sugar
250g self raising flour
a pinch of salt
275g carrots, peeled and grated
4tsp. ground cinnamon
2 1/2 tsp. baking powder
100g chopped walnuts,plus extra to go on top
For the topping:
75g icing sugar
225g soft cheese
1 1/2 tbsp. lemon juice
Step 2: 1.
Preheat the oven to 180degrees. Whisk the butter and sugar together until smooth. Add the eggs, gradually and mix well. Then pour in the grated carrots and stir well.
Step 3: 2.
Sieve in the flour, cinnamon and baking powder and fold in gently. Finally, add in the chopped walnuts. Grease the 25cm round tin and pour the cake mix in. Bake for 30-40 minutes until a skewer inserted comes out clean.
Step 4: 3.
For the topping mix everything together until smooth. Spread over the cake when it has cooled off. Place one large walnut in the centre and sprinkle chopped ones all over the cake.
