Introduction: SOFT & CHEWY CHOCOLATE CHUNK (CHIP) COOKIES

Step 1: COOKIE DOUGH

225g Margarine

110g Caster Sugar

110g Light Brown Sugar

1 Large Egg

1tbsp Vanilla Extract

340g Plain Flour

3 & 3/4tsp Baking Powder

1/2tsp Salt

300g Milk Chocolate

Beat the butter and sugar together until light and fluffy. Add the egg and vanilla and beat again. Sift in the flour and baking powder and gently incorporate into the mixture. Roughly chop the milk chocolate and fold into the mixture. Cover the cookie dough with cling film and leave to chill for 2 hours.

Step 2: BAKE

Place scoops of the chilled cookie dough on a tray lined with baking paper. Bake the cookies at 190 degrees C / 374 degrees F for 10 - 12 minutes. Leave to cool on the tray for 5 minutes before transferring to wire wrack,
