I am still unpacking from two years ago since moving to North Dakota and found my little recipe box that I treasured for years. I have all my recipes on a WORD document on my computer but "my little recipe box" that is SPECIAL because these are recipes that I have had for years and I was so excited when I opened it and forgot about so many recipes neighbors, relatives, and friends have given me throughout the years. When I pulled out this 3 x 5 card and my old Strawberry Pizza Pie recipe I forgot all about I knew I had to share this. It is so simple and absolutely delicious. One reason why is the glaze is made by crushed fresh strawberries; not that processed glaze one buys in the produce department.

Here are all the ingredients you will need:

2 qts strawberries

1 1/2 cups flour

2/3 cups butter

1/4 sugar

8 oz cream cheese

8 oz cool whip

1 cup powder sugar

1/2 cup sugar

4 1/2 teas. corn starch & water

1 Tablespoon butter

2 Teaspoons lemon juice

Step 1: Crust

CRUST

1 1/2 cups flour

2/3 cup soft butter (not margarine)

1/4 cup sugar

Mix the above ingredients and press in an ungreased 10 inch or 12 inch pizza pan. Bake in a pre-heated 370 degree oven for 8 to 10 minutes or until just slightly brown. Watch it as it can get brown very quickly.

Step 2: Glaze

Crush enough strawberries to make 1 cup. (I put in a food processor or blender) Put the 1 cup of crushed strawberries in a quart size kettle and add 1/2 cup sugar. Stir over medium heat.

Dissolve 4 1/2 teaspoons of cornstarch and 1/4 cup of water together. When the strawberry/sugar mixture comes to a boil slowly add the cornstarch mixture and when it thickens take off of heat and add 1 Tablespoon of butter and 2 teaspoons of lemon juice. Cool.

P.S. One helpful hint: If the glaze is not colorful enough add a drop or two of red food coloring

Step 3: Toppping

8 oz. Cool Whip

8 oz. Cream Cheese

1 Cup Powder Sugar

Mix together thoroughly.
 

Step 4: Cream Cheese and Strawberry Glaze

Spread the cream cheese/cool whip mixture over the cooled crust. Then pour the cooled glaze and spread over the cream cheese mixture.

Step 5: Strawberries

Cut up the remaining strawberries and place on top of the glaze. Refrigerate the Strawberry Pizza Pie for at least 4 hours before serving. Enjoy. A wonderful dessert anytime of the year!

    It is and a great treat for the summer but really any time of the year.

    All good ingredients, with the exception of Cool Whip. Cool Whip is primarily made of water, hydrogenated oil and corn syrup. Use real whipped cream.

    I agree if you one wants to watch out with what goes in to ones body. I have used real cream too as it is the best (high fat content) and most flavorful and I add a little sugar on top of that too and beat until stiff-delicious. A good substitute.
