These rolls are light and herby with a yummy sweet and buttery top. They're perfect alongside any entree, and can be adapted to suit any taste. Different herbs can be used in place of the dill, or garlic or shredded cheese can be added if desired.

Step 1: You'll Need. . .

Software -
For dough (amounts are for only 4 rolls - if more are desired, just multiply the amounts):
  • 1 cup and 1/2 cup all-purpose flour (divided)
  • 3 tablespoons butter
  • 3 teaspoons white sugar
  • 1/4 cup warm water
  • 1/2 teaspoon dry active yeast
  • 2 tablespoons dried dill
  • 1 teaspoon course sea salt
To baste (if you prefer a less sweet roll, less honey can be used or it can be omitted. If using herbs other than dill, or if you're using garlic, you may wish to omit the honey and just use butter instead):
  • 1 tablespoon butter (melted)
  • 1 tablespoon honey

Hardware -
  • Large mixing bowl
  • Muffin tin or sheet pan (depending on which shape roll you'd like to make)
  • Small pastry brush
  • Mortar and pestle
  • Towel
  • Measuring cups and spoons

Step 2: Making Dough

  1. Add sugar and yeast to warm water and stir to dissolve
  2. Cut butter into flour using finger tips until the mixture resembles very course corn meal
  3. Use mortar and pestle to grind salt and dill together to a fine powder
  4. Add yeast mixture and dill mixture into flour mixture and stir gently with fingertips to combine
  5. Add additional 1/2 cup of flour and mix until dough comes together. If the mixture remains sticky, add small amounts of additional flour
  6. Cover bowl with towel and place in a warm area to rise for 15 minutes
  7. Punch down and knead gently, then cover and allow to rise for an additional 15 minutes
