Introduction: Seaweed and Chicken Green Onion Pancake

This is a twist on the classic Chinese Green Onion Pancake. Inspired by savoury crepes, I decided to add in some protein in the form of chicken to the pancake (I was also trying to find creative ways of cooking with a large box of cooked chicken tenders). It adds an interesting flavour to an already tasty dish!

Step 1: Ingredients

  • flour
  • milk
  • egg
  • salt
  • green onion
  • cooked chicken tenders

Step 2: Make Pancake Batter

Make the pancake batter. This part is the same for almost all pancakes :)

  • Scramble 1 egg
  • Add half a cup of milk and whisk with egg
  • Add in half a cup of flour and 1 teaspoon of salt
  • Whisk until the batter is smooth without that many clumps

Step 3: Add in Flavour

  • Mince 1 chicken tender into as small pieces as possible
  • Mince green onion
  • Add chicken and green onion into batter and mix well

Step 4: Cook Pancake

  • Add 2 tablespoons of cooking oil to a pan on medium-high heat
  • When the oil and pan have heated up, add in enough batter to evenly cover the entire bottom of the pan
  • Cook on one side for about 1.5 minutes
  • Flip over and cook the pancake on the other side for about 45 sec

Step 5: Garnish

When the pancake has finished cooking, serve it on a plate with some shredded seaweed as garnish and your sauce of choice (I used tonkatsu sauce in this picture). Enjoy!
