Step 1: Ingredients
1 and a 1/4 cups all-purpose flour,
plus extra for dusting
1/4 tsp ground nutmeg
1/2 cup unsalted butter
1/4 cup superfine sugar
Preheat the oven to 350degrees F/180degrees C. Sift the flour and nutmeg into a large bowl.
Add the butter and rub into the mixture until it resembles breadcrumbs. Add the sugar and knead together to form a stiff dough.
Roll the dough out on a lightly floured work surface to about 1/4 inch/5 mm thick.
Using a 2 3/4 -inch/7 -cm round cookie cutter dipped in flour, cut out as approximately 25 cookies. Reroll any trimmings. Place the cookies on two large nonstick baking sheets.
Bake in the preheated oven for 8-10 minutes, or until pale golden. Transfer to a wire rack and let cool completely.
