Simple Crockpot Risotto

This recipe shows a technique to cook risotto without having to standing over a stove constantly stirring.

It looks a lot gummier than when I make risotto the regular way.
You can control how thick the risotto gets by shutting off the crockpot before all the chicken stock is absorbed by the rice. You can also add a small amount of water or chicken stock to thin out the risotto if it's too thick for your taste.
