Step 3: Method

Preheat oven to 500.

Toss potato chunks with olive oil, salt, and pepper. Place on a roasting pan.  Add chicken pieces covering the surface of the potatoes, skin side up.

Roast for 30 minutes.   Take out from oven.  Allow to rest for 10 minutes.
It looks good. But it is easy to make me fat.
Now I am hungry! This looks too good!
I love that you also cook the meat over the veggies - it's the best way. <br /><br />Also, I now need something covered in lemon pepper seasoning. I had forgotten about it until now.
