Cut just through the skin in a ring around the base of the head; this will be where you cut later to remove the head, but for now leave the head on to give you a better grip on the fish.

This creates an edge from which to start skinning.

I use a single edge razor blade for this step. Also, you want to be careful not to cut too deeply, otherwise you will have a bloody mess when you pull the skin off. JB
