Introduction: Slow Cooker Cinnamon Sugar "Mall" Almonds

I've been on a search for a great at home "mall" almond recipe... You know, the treats, sold from carts that fill the air with delicious smells and charge a fortune for a handful of nuts. I've tried a bunch of recipes from other people and kept modifying until I was happy... Finally, here it is! At home "mall" almonds, made in the slow cooker.



Step 1: What You Need

  • 2lbs of whole natural almonds
  • 1 1/2 cups granulated (white) sugar
  • 2 tsps cinnamon
  • 1/2 teaspoon sea salt
  • 2 egg whites
  • 2 teaspoons vanilla

plus
  • non stick cooking spray
  • a slow cooker
  • a whisk
  • a spoon
  • a couple bowls
  • airtight container or large sealable bag for food storage
  • parchment, wax paper or foil

Step 2: Dry Ingredients

Combine sugar, cinnamon and salt in a bowl.  Set aside.

Step 3: Egg Mixture

In a separate bowl, combine vanilla and egg whites and WHISK! It takes about a minute of continuous whisking to get the mixture frothy, but no peaks.

Step 4: Sugar Coat It!

Dump the almonds in the egg wash and stir to ensure all the almonds are completely covered.
Once they are all nice and shiny, pour in the sugar mixture and stir well, making sure the almonds are all covered.

Step 5: Roast

Pour almonds into a slow cooker that you have sprayed generously with cooking spray. Put the lid on and start cooking.
Cook on low for 2 hours, stirring every 20-30 minutes.

Step 6: Cool

Now you have 2 lbs of delicious roasted cinnamon sugar almonds, but be careful, they are hot!
Dump them onto a sheet of parchment, wax paper or foil to cool.
When they have cooled completely, store the ones you haven't eaten yet in an air proof container or food storage bag.
