Easter is a fantastic holiday. (Or should I say egg-celent?) Everyones rejoicing... until the next day when the scale slaps you in the face.So how do you celebrate without packing on the weight? You make this amazing, low calorie, Egg Frittata. Breakfast, Lunch or Dinner, this platter is sure to make your taste buds and scale rejoice!


6 Egg Whites
2 Eggs
1 tsp of Water
1 cup of chopped spinach/green peppers/broccoli (Any combination) 
1 chopped onion
1 half cup of corn kernels 
3-4 tbsp of shredded low-fat cheese
1/4 tsp cayenne pepper
2 tsp of Bacon-Bits
1/2 tsp of Salt
1/4 tsp of Garlic Powder

Step 1: Number 1

Whisk up the eggs and water. 

Step 2: Number 2

Add cheese, spices, and remaining ingredients to egg mixture.

Coat shallow baking dish pie pan with non-stick spray. Pour in egg mixture.

Bake at 425 Degrees F, until firm, puffed, and golden. (About 20 minutes) 

Step 5: Final Step

For a special touch, and browner top, sprinkle top with cheese and broil for a few seconds before serving.
