One of our favorite summer treats are S'mores. If you love S'mores then you will love these delicious S'mores cupcakes. Rich chocolate cake, fluffy marshmallow buttercream and graham cracker on the top and bottom. S'mores Couture Cupcakes

Chocolate Cake:

Sugar 1 C

Cocoa Powder 1/2 C

Salt 1 tsp

Baking Soda 1 tsp

Flour 1/2 C

Water 1 C

Vinegar 2 tsp

Vegetable 1/2 C

Egg 1

Graham Crackers (About 5 crackers blended to fine crumbs)

Marshmallow Frosting:

Butter 1 stick

Marshmallow Fluff 1 C

Confectioners' Sugar 1 - 1 1/2 C

Milk or Cream 2 tbsp

Salt 1 tsp

Melted chocolate 1 C

Tools:

Cupcake Pan with Liners

Blender and Mixing Bowls (2)

Whisk

Spoon or small shot glass sizes cup

Step 1: Chocolate Cake

In a large bowl: Add all dry ingredients- sugar, cocoa powder, flour, baking soda, salt. Whisk all ingredients together until fully combined and streak free.

Add wet ingredients (water, vinegar, oil, and egg. Whisk until completely smooth).

Prepare the cupcake pan: I used a nutribullet to blend about 5-6 whole graham crackers until they reached a flour like consistency. Feel free to use any food processor, blender or other means of crushing the crackers. Line the cupcake pan with liners and spoon a tablespoon of graham cracker crust into each cupcake. Compact it down with a spoon or cup that fits in the liner.

Lastly, fill about half way with batter and bake at 350 degrees for 17 minutes or until a knife inserted comes out clean.

Step 2: Marshmallow Frosting

Start off with your own vanilla frosting or try my recipe using the ingredients from the intro page:

In a bowl, cream butter until smooth. Add powdered sugar, salt and any other flavorings (such as vanilla). Beat with a mixer for 5 minutes then add marshmallow fluff and continue to mix for 1 minute. Put frosting in a piping bag with a large circle tube tip.

Step 3: Chocolate Layer

After the cupcakes have been allowed to cool for a few minutes, melt down your favorite chocolate. I used about 1 cup, but use as much as you need. Dip each cupcake into the melted chocolate and set aside to allow it fully cool and harden.

Step 4: Bring on the S'mores!

Top each cupcake with a swirl of marshmallow frosting and a graham cracker square and voila you've got amazing S'mores cupcakes!
