How to Make Sodium Acetate From Household Ingredients

Drying
Scrape up the gel and any stray crystals and transfer this to a small bowl lined with a coffee filter. The filter will absorb some of the remaining water.

It helps the drying process if you break up the gel into smaller pieces.

nope, that's the sodium acetate crystals. The baking soda should only be used the first step, to dissolve into the vinegar. Sodium Bicarbonate (baking soda) plus Acetic Acid in water (vinegar) = sodium acetate in water + Carbon dioxide
when you boil off the water, you end up with the sodium acetate crystals you see here. The gel just doesn't have all the water out of it yet.

same stuff, but dry. (the gel part is just gel because it still has some water in it. if it dried and you crushed it, it would look like the white powder)

if you create a saturated solution of sodium acetate (by heating it and dissolving as much as possible into water) and let it cool slowly then add a seed crystal (just a small amount of solid sodium acetate) then it will grow into this completely awesome crystal right in front of your eyes - doesn't take long but looks really cool.

you can eat this it is quite safe. Basically its just salt and vinegar flavouring like they put on chips. If when you make it you don't use anything unhygienic than you will be fine. Sodium acetate is just a fun way of saying salt and vinegar flavouring. This isn't remotely hazardous to your health.
