The dough ball will be hot

Step 4: Knead It Up

Spread a even layer of baking mix on your counter or cutting board to prevent the dough from sticking.

Be sure to get some baking mix on your hands as well

Once dough ball is cool enough to touch, grab it out of your bowl and set it on you surface.

Knead the dough about 10 times, folding it in half and pressing down each time.

The dough should look and feel very smooth (see picture below)

Mold the dough into a rectangle for cutting

Step 5: Set It Up

Cut the dough lengthwise in half, and then widthwise into 8 sections

Separate the sections and flatten them into circular shapes with your palm (be sure to wash you hands)

Scoop about 1/3-1/4 cup of beans into the center of a section

Top off with a sprinkling of cheese and hot sauce

Fold dough over beans, cheese, and sauce making a shell-like shape.

Pinch the edges down to seal the shell

Cut off excess dough and slit the top with a knife for even cooking

Step 6: Cook It Up

BE SURE NOT TO BURN YOURSELF ON HOT OIL (IT WILL HURT)

Insert your finished shell into the deep fryer and cook for about 3 minutes

After cooking, the shells should be a Brazilian tan

Carefully take them out, being sure not to burn yourself, strain off extra oil and serve!

Step 7: Finish It Up

Enjoy them.

The dish goes well with a taco salad or taco soup.

Has a very pleasant taste and a good comfort food.

You can add more or less sauce depending on your desire for spiciness

These remind me of Patties, do you think there's any connection?

I actually discovered this by deep frying an empanada but they are very similar. I think the major difference is the type of dough used, patties are like a corn bread and the dinner shells are a wheat dough

Yes that makes sense. But I've got a Southern-states- Caribbean connection in my head do you think there might be a common origin, maybe 100 years ago or so? L

I honestly don't know, sorry. I invented these just within this year and I didn't get it from a cookbook. The reason they are named southern dinner shells is because of what's inside them, they reminded me of a southern meal when I ate them for the first time.

They look great (and a bit better that Patties I've seen, which I'm beginning to think may have evolved into Jamaican junk-food...) L
