Introduction: Spam Fried Rice

Do you ever crave some tasty fried rice? Well, here's a fairly simple recipe using Teriyaki flavored SPAM.

This is my version of fried rice, you can decrease the number of jalapenos but I think 3 is just right.

Take my word for it, this stuff is delicious!

Step 1: Ingredients

You will need the following ingredients:

2 cups Long grain white rice

4 cups water

1 can of Teriyaki flavored SPAM (12 ounces)

3 large Eggs

3 or 4 green onions

3 Jalapenos

bag of Frozen Peas and carrots

1/4 cup Shortening (separated)

Step 2: Cook Rice

Bring 4 cups of rice to a boil. Add 2 cups of rice, turn the heat down to low and cover. Cook for 20 minutes, do not remove cover while cooking.

When the rice is cooked, turn off the heat and pour in the bag of frozen peas and carrots. Stir until well combined. Place the lid back on the pan. Set aside for 15 minutes.

Step 3: SPAM

While the rice is cooking, open the can of Teriyaki SPAM and invert onto a plate. Slice and then cut into 1/2" x 1/2" size pieces.

Step 4: Jalapenos

Slice the jalapenos lengthwise and remove seeds and veins. finely chop jalapenos.

Step 5: Green Onions

slice green onions, set aside.

Step 6: Frying Pan

Place 2 tablespoons shortening in large frying pan, turn heat on medium. Add SPAM and jalapeno. Stir while cooking for 3 minutes.

Step 7: Eggs

Crack 3 eggs into glass measuring cup. Stir well with a fork.

Pour eggs over SPAM and jalapenos. Stir continuously until eggs are cooked, 2 minutes.

Step 8: Combine All Ingredients

Add rice, peas and carrots to SPAM mixture. Stir while cooking.

My frying pan was not large enough so I cooked it in 2 separate batches.

Cook for an additional 2 or 3 minutes, continue to stir.

Turn off heat, add sliced green onions and Stir well to combine.

Serves 6.
