Introduction: Spicy Corn Curry

Sweet corn is one of the healthiest vegan foods available. They can be cooked and flavored in so many ways that everyday chefs around the world are trying to use them in different recieps.

In this Instructable, I'll show you how to prepare a spicy corn curry, which will be a perfect stuffing in wraps and sandwiches. Once you try this, I'm sure you'll want to try it again and again in your own different ways.

Step 1: Ingredients

For this simple spicy recipe, you'll need to have the following in your Shopping cart:

  • Sweet Corn
  • Tomato
  • Red Onions
  • Salt
  • Red Chili Powder
  • Oil

Step 2: Boil the Corn

Corn cannot be consumed directly or you cannot add any raw corn into a recipe. So before getting started with the curry, it's always advised to cook the corn.

Take some corn in a bowl and add water to it. Bring it to boil and set it on medium flame till the corn is cooked. Check the corn occasionally to see whether it's cooked or not.

You can add in a pinch of salt to it to fasten up the boiling process.

Step 3: Chop the Veggies

Now it's time to prep the veggies to cook.

Clean the tomatoes and onions with fresh water and vegetable cleanser if you want.

Next chop them down into tiny pieces as shown in the picture.

It's time to turn on the gas now !!

Step 4: Fry the Veggies

Now heat some oil in a pan and then add in the chopped onions.

Saute the onions till the edges turn golden brown in color. After the onions are cooked, add in the chopped tomatoes in it. Saute the tomatoes and also add in a pinch of salt. The salt helps the tomatoes cook faster.

After both the veggies are cooked, it's time to season them.

Step 5: Seasoning and Corn

Once the veggies are properly cooked, you should notice that the quantity is considerably reduced as from the initial one. Now for seasoning, I'm using some red chili powder and sea salt.

You can use your own style of seasoning for this recipe. Add 1 Tablespoon of Red Chili Powder and 1/2 Tablespoon of salt. Adding a 1/2 Teaspoons of turmeric powder helps improve the flavor.

After adding the seasoning, mix it well and add in the corn. Stir the mixture well enough so that the flavors get into the corn as well.

Step 6: Serving

You can enjoy this delicacy as it is. But it's best tasted as a stuffing for some wraps or cheese sandwiches.
