Introduction: Spicy Taco Bell Chicken Quesadilla
So this is a recipe that a found here on this website - http://www.topsecretrecipes.com/Taco-Bell-Chicken-... - but i modified it for those of us that like a little burn to our food.
What you want to do first is get these ingredients:
At least 1/4 cup Mayonnaise, 3 jalapenos, some sugar, paprika, cumin, cayenne powder, garlic powder, salt, chicken, oil, tortilla, cheddar jack cheese blend, 1/2 american cheese slice.
first, make sure the chicken is thawing and marinating in hot water. put the chicken in a ziploc and put oil and hot sauce in it too. Then seal the bag and place it in hot water.
Now it's time to make the sauce. put 1/4 cup mayonnaise in a cereal bowl. Now add 1/8 teaspoon garlic powder, 1/8 teaspoon cayenne powder, 1/8 teaspoon salt, 1/2 teaspoon cumin, 1/2 teaspoon paprika, 3/4 teaspoon sugar, and stir.
Now, mince (cut in to small pieces) the 3 jalapenos and then crush them with the knife to get the juice. put/pour the all of it in to the sauce ( including the pulp ) and stir again.
add 1 teaspoon of hot sauce and stir.
put the sauce in a container, cover, and put in your fridge.
take out the chicken and put it on the grill. you'll have to have it on low and check on the chicken every 5 min. when you check on your chicken, flip it over. so basically flip your chicken every 5 min till it looks like chicken.
get a tortilla out and arrange cheese onto half of it. tear 1/2 of an american cheese slice and arrange the pieces on to the half of the tortilla with cheese already on it.
equally spread the sauce onto the other half.
make sure that you've been checking and flipping your chicken.
now that the chicken is done, cut it into approx. 3cm x 3cm Cubes and arrange the cubes onto the half with the cheese.
fold the side with the sauce on it over the other side and put it in the pan on medium. press down on it with the spatula for 1 min and then flip. leave it in the pan for 2 min, don't press this time. take it out and serve warm. :)
