Introduction: Squash Ceviche With Blueberries From

Step 1: Ingredients

Gather up a squash, garlic clove, lime, spring onion, a jalapeno, some blueberries, and a bit of parsley. That's it!

Step 2: Slice

Then, using a mandoline or really sharp knife, thinly slice the onion, garlic, jalapeno, and squash into a bowl.

Step 3: Zest the Lime...

Step 4: And Squeeze the Lime Juice Into the Veggies.

Step 5: Now, Stir Everything Together and Let the Ceviche Sit in the Fridge for 20-30 Minutes Until the Veggies Start to Soften Slightly.

Step 6: Right Before Serving, Add the Berries and Lime Zest and Toss Everything All Together.

Step 7: Serve Using a Slotted Spoon Topped With the Parsley. Enjoy!

Absolutely beautiful and perfectly quick to make for Memorial day. I had to let you know we serve this early today and it was a hit with our dieting group. We needed a blueberry recipe and this was the winner, we will be pinning this. Blueberries cause great fat loss here
