Introduction: Stale Cereal Muffins

What to do with stale cereal? Instead of tossing it in to the trash, why not make them in to tasty muffins, providing they’re not infested with maggots or brandishing a foul taste then just give them to the birds. Otherwise make some tasty muffins.

I’ll have to give credit to a Honey brand muffin recipe that I used to adapt for this handy and tasty recipe.

You can pretty much use any cereal you have lying around but its best avoiding cereal with chunks of dried fruit since its difficult for a blender to grind. But that is up to you. I used a Fiber Plus, Maple or brown sugar flavoured Cereal for this.

Things you need;
A blender or food processor. An electric mixer. A large muffin pan. Paper cups for the muffin pan. Bowls, measuring cup and measuring utensils.

Last but not least the food ingredients.

1Cup                 stale cereal loosely ground
1 Cup                buttermilk
1/3 Cup             butter or margarine softened
1/4  Cup            water
1/2 Cup             brown sugar
2 tbsp                honey
                        egg
1 Cup                 all purpose flour
2 tsp                  baking powder
1/2 tsp               baking soda
1 tsp                  salt

Optional

1/4 Cup              of chopped nuts
1/3 Cup              of dried fruit like raisins or choc chips or other flavoured chips

Step 1: Prep

Using a food processor or blender loosely grind your choice of stale cereal until you have a cup.

Step 2: Soak and Prep

Soak stale cereal and any dried fruit you decided to include and put it  in buttermilk while preparing the other stuff.

Step 3: Wet Prep

Cream butter or margarine and brown sugar. Then beat in honey, egg and water. Add the mushy buttermilk and stale cereal mixture.

Step 4: Dry Prep

For the dry ingredients, stir together the flour, baking powder, baking soda and salt.

Step 5: Mix Together

Mix together the dry ingredients and the wet mixture of the cereal goop until moistened. Also add any extra ingredients like the nuts est and mix. Do not over mix since that will make your muffins like rocks.

Step 6: Fill It Up

Fill your stale muffin goop up to the top of each muffin papered well of your large muffin pan.

Step 7: Bake It

Bake at 375* for roughly 15-20 min. Your baking times may very depending on your oven and home location.

Step 8: Result

You should have 9 to 10 large soft, fluffy and tasty muffins.
