Introduction: Strawberry Ambrosia Nachos With Cinnamon Tortilla Chips

This recipe for simple, fruity Dessert Nachos was the victim of a chocolate assault.  Before I knew what was happening, mini chocolate chips and a stream of fudgey chocolate syrup were everywhere.  

What could I do??? I ate the whole thing.

Ambrosia Ingredients and preparation:
  • 1- 8 oz. Tub of Cool Whip- defrosted in refrigerator
  • 1 cup fresh Strawberries- sliced
  • 1- 15 oz can of Fruit Cocktail- drained
  • 1- 11 oz can Mandarin Oranges- drained
  • 1- cup shredded Coconut
  • 1/2 c Mini Marshmallows
  • a pinch of Ground Nutmeg
  • a pinch of Cinnamon
In a medium bowl, fold the Cinnamon and nutmeg into the Cool Whip topping. Fold in the remaining ingredients, cover with plastic wrap and refrigerate.


Ambrosia Topping (Chocolate is optional):
  • 1/2 cup fresh Strawberries- sliced
  • Mini Chocolate Chips
  • Chocolate Syrup
Cinnamon Tortilla Chips:
  • Store-bought Corn Tortilla Chips
  • Canola Oil Spray (Aerosol)
  • 1/4 cup Sugar mixed with 1/2 teaspoon Cinnamon
Preheat your oven to 350 degrees. Put a layer of Tortilla chips on a cookie sheet. Spray lightly with Canola Oil then sprinkle generously with Cinnamon sugar. Turn the chips over and repeat the process.  Bake for 3 minutes. Remove from the oven and cool.

TO BUILD YOUR STRAWBERRY AMBROSIA NACHOS:

Put a layer of Cinnamon chips in a bowl or on a plate. Spoon generous scoops of Ambrosia on top of the chips. Encircle the Ambrosia with additional chips. Sprinkle with the fresh sliced Strawberries... (add chocolate... YUM!... if you dare!) and serve.
