Introduction: Strawberry BBQ Ketchup
This BBQ ketchup is an allrounder, it just fits to any type of meat or vegetables. The fruity taste of strawberries makes it even a viable spread for your roasted bread. For any occasion, for any place, outdoors, dinner and banquett, this sophisticated ketchup raises eyebrows and appreciation.
Step 1: Ingredients
What you need:
- 500grams strawberries
- 400grams tomato puree
- 100grams sugar
- 50grams tomato paste
- 20grams ginger
- 2 onions
- 1 clove garlic
- 1 chili pepper
- 5 tablespoons aceto balsamico
- 2 tablespoons soya sauce
- 2 tablespoons olive oil
- 2 tablespoons worcestershire sauce
- 1 tablespoons mustard
Step 2: Prepare the Strawberries
Clean the strawberries with cold water and cut off the stem; perhaps leaves. Then blend the nuts with your hand blender or mixer. Yes, the berries are in fact nuts embedded into a pulp.
Step 3: Prepare the Onions
Peel the onions/garlic and mince them into small pieces. Sweat them with the olive oil in a saucepan. Meanwhile peel the ginger with a spoon and then grate it. Scale 100grams of sugar and give it to the onions to caramelise them. Weigh 50grams of tomato paste and give it into the saucepan as well, let it roast a little bit.
Add the grated ginger to the pureed strawberries. Clean the grater with the 5 tablespoons of aceto balsamico right into the mixture.
Step 4: Prepare Containers
Add the pureed tomatoes and clean containers for your BBQ sauce in hot water. Let them dry upside down on a clean dishcloth.
Step 5: Add the Rest
Add all other ingredients to the saucepan, the pureed strawberries with the ginger, the soya and worcestershire sauce, the mustard and the seasonings. Stir occasionally and cook on medium heat for 30 minutes.
Step 6: Canning or Bottling
Now its time to fill the strawbery BBQ ketchup into the cleaned and prepared mason jars or bottles. It can last 3 months in the fridge, enough for the whole summer, if it lasts that long.
Of course you can also use it as marinade like I did with these spare ribs. Because of the fruity taste and sugar you don't have to apply honey on them for a spectacular flavour. Try it out!
