Introduction: Strawberry Lemonade Popsicles

I don't know about you, but the summer is heating up my household and with an energetic little brother at home.. it's hard to keep him occupied.. That is, until you pull this out of the freezer! Strawberries season is coming to an end pretty soon, so let's make use of those delicious berries and turn them into scrumptious popsicles!

Step 1: You Will Need..

For the strawberry lemonade you will need:

  • 2 cups of pureed OR just 4 cups of wholesome strawberries
  • 1 cup of lemon juice
  • 1 cup of granulated sugar (or some kind of sweetener)
  • 4 cups of water

To make the popsicles you will need:

  • popsicle molds OR
  • ice cube tray and popsicle sticks

OPTIONAL:

  • blender

Just to let you know, you can use less of an ingredient if it suits your taste. I opted for 1/2 a cup of sugar just because I love the tangy taste of lemon - but if you like it sweet 1-1/2 cups of sugar should be just fine!

Step 2: Blend 'em!

If your strawberries are not already pureed: put the sugar, whole strawberries and lemon juice in a blender and pulse. When it looks like pureed enough for you, add the water in and pulse to blend. If you blend too much, the strawberries will be liquified -- which may be desirable for you :)

If your strawberries are already pureed, you can just put all the ingredients into the blender and mix thoroughly.

Note: If you don't have a blender, don't fret! You can always just cut the strawberries into smaller pieces and then mash with a fork before dissolving the sugar in it then lemon juice and water. It may also separate like in the photo, but no worries -- it still tastes wonderful!

Step 3: Storage

If you blended this tasty beverage, you'll want to let it sit for a couple hours to allow the foam to settle down. If you don't, you'd probably end up with a little bit of foam on your popsicles!

To store, I poured enough for my popsicle molds before putting the rest into a glass bottle to allow the foam to settle. Both went in the freezer and fridge promptly so that I wouldn't cave in to temptation and drink the whole thing! If you don't have popsicle molds, you could use an ice cube tray and small popsicle sticks for a makeshift version or even replace it with a small cup.

And voila! Easy peasy lemon squeezy strawberry lemonade AND popsicles! How simple is this?
