Introduction: Stuffed Capsicum

Stuffed capsicum is one of my favorite. I was awaiting for a long time to prepare this after I tasted in one of buffet. Yummy it was. Capsicum (bell pepper) has many medicinal values. It cures intestinal gas problems, stomach pain and diarrhea. Recent studies shows that it can be used to cure heart problems and control cholesterol levels.






I got this recipe from my friend, who is avid lover of cooking. I altered the taste according to my taste buds. The bell peppers are stuffed with spicy blend of potatoes and peas. This will definitely ring bell to your taste buds.


And here go the recipe.


Ingredients :

Green bell pepper - 1
Red bell pepper - 2

For stuffing :


Baby Potatoes - 1/4 kg
Onion - 1 -2 (finely chopped)
Tomato - 1/2 cup
Yogurt - 2 tbsp
Green chilli - 2
Green peas - 1/4 cup
Carrot - 1/2 finely diced
Ginger garlic paste - 1/2 tbsp
Garam masala - 1/2 tbsp
Coriander powder - 1/2 tbsp
Aamchur powder - 1/2 tbsp
Jeera - 1/4 tsp
Oil - 3 tbsp
Salt to taste



Method :


Cook the potatoes in a pressure cooker, till it become soft and easy to mash. Peel off the skin and add 1 tbsp of plain yogurt  Mash the contents and keep it aside. In the mean time, we will prepare the stuffing.



Heat oil, add cumin seeds, ginger garlic paste. Saute the onions till it changes the color  Add tomato, green chilli peas, carrot and let it cook for 2-3 minutes. Since the peas is streamed already, it wont take more than 3 minutes to cook.Add garam masala, coriander powder, aamchur powder to the mixture. Finally add the mashed potatoes and 1/2 cup of water. Let it cook it on low flame for 7-10 minutes. The stuffing is ready now.


In the mean time, we will prepare capsicum for the contents to stuff in.


Take the capsicum. Cut it into half and scoop out the seeds inside. Fill the capsicum with the potato stuffing. Preheat an oven for 10 minutes and bake the stuffed capsicums until done. Be careful not to burn it.
