chop four slices of your favorite bacon into cubes
add the bacon to a table spoon of olive oil and cook until crispy
chop a half of a cup of parsely into to very small pieces
chop a 8oz. package of any mushroom you like into 1in. cubes (make sure to wash your mushrooms before you chop them)
add the mushrooms to the pan and cook them until they are cooked through (about 5min.)
add the parsely to the pan and stir that in
mince 4 cloves of garlic
a table spoon of lemon zest and half a lemons juice(hold the lemon up so the seeds do not fall into your pan) also add your garlic and cook for a min....
add a table of plain bread crumbs to the pan and mix well
butterfly your pork( cut it in half but leave an 1in. border from the end of the pork so you don't cut all the way through it) i am using an 8oz. pork...
open it like a book
cover it with some saran wrap an use the side of a meat hammer and pound it out until it is flat
add all of you mixture to the middle of your pork and spread evenly over it
