Step 1: Cookie Dough

170g / 3/4 Cups Unsalted Butter

225g / 1 Cup Caster Sugar

2 Eggs

343g / 2 & 3/4 Cups Plain Flour

1tsp Peppermint Extract

Green Food Colouring

1/2tsp Salt

Beat the butter and sugar together until light and fluffy. Add in the eggs and beat together before adding the peppermint extract and food colouring. Finally, mix the flour and salt together and add to the mixture. Wrap the dough in cling film and leave to chill for 8 hours. Once chilled, roll out the dough and use a cookie cutter to cut out circles. Place the cookies on a baking tray lined with parchment paper and bake for 10 minutes at 190 degrees celsius / 347 degrees fahrenheit. Leave to cool on a wire wrack.

Step 2: Purple Chocolate

200g / 1 & 2/3 Cups White Chocolate

Red & Purple Food Colouring

Temper the white chocolate and mix in the food colouring. Turn the cookies over so the backside is showing and drizzle the chocolate over and leave to set.

Step 3: Icing

Icing Sugar

Milk Peppermint Extract

Black & Blue Food Colouring

Mix all the ingredients together and use a toothpick to draw on the skulls.
