Introduction: Summer Panna Cotta With Strawberry Sorbet Filling

This is a great treat for a hot summer day to share with your friends! (Or not, I just ate them all myself Ψ( `▽´ )Ψ) The nice cold panna cotta slides down your throat easily and the strawberry sorbet gives it that nice tangy summer touch. Enjoy!

Step 1: Ingredients

    Makes around 4 - 6 servings depending on the size of your mold

    Panna Cotta

    • 5 tablespoons of sugar
    • 1 cup of half and half
    • 1 teaspoon of Vanilla extract
    • 1 cup of whipped cream
    • 1 cup greek yogurt
    • 1 envelope of gelatine (1 tablespoon)
    • 2 tablespoons of water

    Strawberry Filling

    • 1 cup of cut strawberries
    • 1/2 cup of water
    • 3 tablespoons of sugar

    Step 2: Making the Sauce

    Put all of your cut and washed strawberries into the blender with the sugar and water. Blend until completely smooth and pour into a pot.

    Step 3: Boil the Sauce

    Place the blended sauce with your cut strawberry chunks over medium heat and stir until foamy bubbles form (10 - 15 min). After allowing the liquid to cool a bit pour into an ice cube tray and place into the freezer until frozen solid. You can use an ice cube tray or anything you want, just make sure it will be able to fit in the middle of your Panna cotta mold with at least a cm to spare on the top and the bottom. Also make sure to leave a bit of sauce to drizzle around for later.

    Step 4: Making the Panna Cotta

    Combine the whipped cream, half and half cream and sugar together over moderately high heat and stir until the mixture foams. Now take off the heat and wait until the cream cools to room temperature.

    Step 5: Gelatin

    In a small bowl pour in 2 tablespoons of water and microwave for 30 seconds. Then pour in the packet of gelatine and stir until all the gelatine dissolves and the mixture becomes clear.

    Step 6: Mix Together

    Mix the gelatine, vanilla extract, and yogurt into the cream and combine well. Now pour the mixture into the waiting cups until almost full. Now pour 2/3s back out into the pot (This is to make sure all the proportions are correct) and place into the freezer (Yes. The freezer. The top part where all the ice cubes are kept) until the panna cotta sets which should take around 30 min.

    Step 7: Assembly

    Now take out your frozen strawberry sauce (I know that it looks like ketchup now, I promise it won't look like ketchup later) and gently press into the waiting Panna cotta to prevent it from shifting around. Now pour the rest of the Panna cotta into your mold and adjust so that the sauce is right in the middle of the treat. Make sure to cover the strawberry sauce completely and place back into the freezer until it sets and then you can take it out of the fridge and allow it to thaw for 15 - 20 min. Do not leave it out for too long though because it will melt.

    Step 8: Decorate and Serve

    Dip your Panna Cotta in some hot water for a few seconds so it will easily slide out of the mold. You should have this beautiful Panna Cotta with a sorbet surprise in the middle. Now cut up some strawberries, drizzle some of your remaining strawberry sauce around to decorate and enjoy.
