Chock full of superfood goodness, this pudding hits the sweet spot for a rich and nutritious dessert. Chia seeds are high in Omega-3s and fiber, antioxidents and 1 Tbsp of dried seeds has 2 g of protein! Add to that benefits of coconut and unsweetened chocolate and this baby is solid superfood all the way!
Step 1: Assemble Ingredients
You will need:
chia seeds, coconut milk, unsweetened cocoa powder, maple syrup, a blender, toppings of your choice (like chopped almonds, coconut, shaved chocolate, etc)
Step 2: Measure and Blend
To the blender add: 2 Tbsp cocoa powder and 1 cup coconut milk. Blend. On a low setting, add in 3 Tbsp chia seeds. stir in maple syrup to taste.
Step 3: Chill to Set
Transfer mix to a bowl and chill in the fridge for at least 30 minutes.
Step 4: Top and Enjoy
Top set pudding with other delicious super foods like coconut, almonds, berries or shaved dark chocolate. Enjoy!
