This is an incredibly easy/tasty BBQ side dish that will please any of your house guests (kids, neighbors, in-laws, outlaws and the like). I usually make this dish in tandem with the main course (i.e. bbq chicken, steak or salmon) so the entire dinner (aside from the salad) can be made on the grill.

Serves 4-6 people


2 russet potatoes (cubed)

1/2 yellow onion (diced)

1/2 cup of cheddar cheese (shredded)

3 splashes of olive oil (shaken not stirred)

Season with garlic salt, paprika and a little black pepper

Step 1: Slice & Dice

Wash and dice up the spuds and slice up the onions
oh yes they are super tastee - even better the next day (they make a mean hash-brown -esq dish for breakfast) :)
Why dirty a dish? Its a BBQ, serve it rustic style in the foil ! They sure do look good .
