Simple seedy breakfast muffin recipe, which can be thrown together in 10 minutes and ready to eat in 45 minutes.

Here are the ingredients:

350g Spelt Flour

150g Caster Sugar

1 tsp Baking Powder

1 tsp Baking Soda

1 tsp Cinnamon Powder

75g Sunflower Seeds

50g Pumpkin Seeds

50g Sesame Seeds

50g Flaxmeal (optional)

2 Eggs

250ml milk (dairy or non-dairy)

100ml Vegetable Oil

1 tsp Vanilla Essence

Optional additions: Sesame Seeds and Pumpkin Seeds (for the muffin tops)

Bake for 25-35 minutes in a pre heated over at 200 degrees until a a skewer inserted into the muffin comes out clean.

  • Break into a clean bowl two eggs
  • Add 100ml of vegetable oil
  • Add 250ml of milk Whisk into this mix 1 teaspoon of vanilla extract
  • Into a fresh bowl sieve 350g of spelt flour
  • Add 150g of caster sugar
  • Add 1 teaspoon of cinnamon and 1 teaspoon of baking powder and one teaspoon of baking soda
  • Mix the dry ingredients together
  • Slowly add the wet mixture (a bit at a time) into the dry ingredients mixing thoroughly
  • To this mix now add the following seeds: 75g Sunflower Seeds 50g Pumpkin Seeds 50g Sesame Seeds 50g Flaxmeal (optional) Mix these seeds thoroughly into the mixture
  • Either line or grease with butter your muffin tin segments
  • Spoon the mixture into the segments in the tin
  • Sprinkle sesame seeds or pumpkin seed on the top of each muffin
  • Bake for 25-35 minutes in a pre heated over at 200 degrees until a a skewer inserted into the muffin comes out clean

Break into a clean bowl two eggs

Add 100ml of vegetable oil

Add 250ml of milk

Whisk into this mix 1 teaspoon of vanilla extract

Step 3: Dry Ingredients

Into a fresh bowl sieve 350g of spelt flour

Add 150g of caster sugar

Add 1 teaspoon of cinnamon and 1 teaspoon of baking powder and one teaspoon of baking soda

Mix the dry ingredients together

Step 4: Combine Wet and Dry Ingredients

Slowly add the wet mixture (a bit at a time) into the dry ingredients mixing thoroughly

Step 5: Add the Seeds

To this mix now add the following seeds:

  • 75g Sunflower Seeds
  • 50g Pumpkin Seeds
  • 50g Sesame Seeds
  • 50g Flaxmeal (optional)

Mix these seeds thoroughly into the mixture

Step 6: Bake the Muffins

Either line or grease with butter your muffin tin segments

Spoon the mixture into the segments in the tin

Sprinkle sesame seeds or pumpkin seed on the top of each muffin

Bake for 25-35 minutes in a pre heated over at 200 degrees until a a skewer inserted into the muffin comes out clean
