This is a great dipping sauce for spring rolls or even spread on a chicken sandwich.

Step 1: Ingredients

200g Red Chillies
100g caster sugar
100ml water
2 teaspn white wine vinegar
15g fresh ginger, peeled and roughly chopped
3 garlic cloves, peeled and roughly chopped
Pinch of salt.

Step 2: Dissolve the Sugar

Combine the sugar, water and white wine vinegar in a small pan and heat on medium until the sugar melts.
In the mean time prepare the other ingredients.

Step 3: Add the Flavours

Add the chilli, garlic, ginger and salt.
Bring to the boil and simmer over a moderate heat until soft and when it starts to thicken (about 5 minutes don't let the mixture catch the bottom of the pan).
Allow to cool and keep in the fridge

(This will keep indefinitely in the fridge)
