Three little cows went searching for pi(e).
The first one said, "There it is! I see it in the sky."

The third cow said, "No, that's not it.
We're looking for the kind that's infinite."

"Well, it's pie to me." said the first little cow,
"And I'm going to eat it because I definitely know how."

So the first little cow stayed to eat up his find.
The other two kept searching and left him behind.

The third cow said, "Now, where can it be?"
The second one said, "There! It's up in that tree."

And he raced off to get his very own pie,
The third cow all alone but still had to try.

Try to find pi and he knew that he could,
It shouldn't be hard, then he saw the near woods.

And there around the very next bend,
his eyes opened wide - the pies would never end........

Step 1: Explanation

Okay, now, you may or may not think I am a total geek for putting this story together, but here is the explanation of it...

These pie pops are a twist on the traditional cake pops and since I had a bunch of sweet potatoes sitting in my basket I figured the pie pops should be sweet potato pie based.

If you happened to read my banana cream pie recipe I made a walnut-pecan crust for it. I used the same ingredients to fulfill the crust portion of these pops.

I remember, foolishly, refusing to eat any sweet potato dish as a kid but I do remember one dish that was topped with marshmallows, so I made a marshmallow fondant to keep with those same flavors. So, I guess these pops are sort of a combination of sweet potato casserole and sweet potato pie all rolled up in a pop - or a cow!

I show how to put the cows on a stick but my story was better told with the cows standing on their feet!
