Introduction: Sweet Potato Dough

This is a super tasty healthy pizza dough made from sweet potatoes.

Step 1: Ingredients

1 good sized sweet potato, boiled and mashed

2-3 cups of AP or Bread Flour

3/4 cup of warm water

2 tablespoons olive oil

1 tsp salt

2 1/4 tsp yeast

Step 2: Boil the Sweet Potatoes

Skin and cube the sweet potatoes.

The smaller the cubes the fasted that will boil.

Boil till tender.

Step 3: Do the Mash

Do the sweet potato mash.

It will be a pizza party smash.

Step 4: Mix-a-lot

If you have a bread machine set it on the dough setting.

Check the mixture a few minutes into the bread machine's dough cycle to make sure the dough isn't too sticky. If it is, add more flour.

If you do not have a machine you can mix it by hand. Then place it in an oiled bowl covered with a clean towel to rise.

Check it in an hour. Punch it down adding more flour if necessary.

Let it rise another hour.

Step 5: Roll It Out

When it is done rising. Roll it out and use it for your favorite pizza. I suggest my "Vegan Pizza (Rainbow)"

Yeah. You could microwave it. I don't think you would save a tremendous amount of time.

For me I work with children in a treatment center so we were working on basic cooking skills like peeling, cutting, and boiling.

Instead of peeling and cubing then boiling the potato, you can stab some holes in it and nuke in microwave for 3 minutes, twice. You can do the same with russet potatoes.

I don't see why you couldn't. Roll it into balls. And do an egg or olive oil wash.
