This might be one of the best things I've ever created. Honestly. Even better than sweet potato fries
The flavors blend so well! You should really make this now. You could have something truly awesome to eat in less than a half hour. :D
Step 1: What you'll need:
a large sweet potato
bunch of green onions (about 3 onions per sweet potato)
bacon of choice (or bacon bits - I used 3 strips of bacon for one potato.)
shredded cheese of your choice - I recommend cheddar!
salt, pepper and chili powder
olive or canola oil
an oven preheated to 450 F
You'll also need a sheet pan to bake them on, and I recommend lining it with foil if you've got any around. :)
Step 2: Preheat oven, cut up green onions, get out sour cream.
Preheat your oven to 450 F.
While the oven is preheating, take out a bit of sour cream to get it closer to room temperature.
Cut the green onions into thin slices.
Step 3: Cut up the sweet potato.
Trim the ends off the sweet potato and cut the sweet potato in rounds about 1/2 inch wide.
The rounds that come from the ends of the potato are fine to be slightly thicker so they cook at the same rate.
Step 4: Prep the sheet, season the potatoes.
Rub a tiny bit of oil onto your pan or aluminum foil and lay the potato slices on top. Sprinkle generously with salt, pepper and chili powder and then flip the potatoes and rub them around so they get well coated in oil and spices.
Step 5: Roast the potatoes and cook your bacon.
The potatoes will roast for 10 minutes, then get flipped over and go for another 8 minutes. While they're in the oven, cook your bacon and crumble it.
Step 6: Top the roasted potatoes with cheese!
Sprinkle a tiny bit of your favorite cheese on the rounds and put them back in the oven for a minute or two - just so the cheese gets nice and melty.
