Introduction: TRIPLE CHOCOLATE MOUSSE
perfect for valentines day and one of the best chocolate recipes and another way to get rid of your chocolate stock pile.
Step 1: Prepare All Ingredients
-7oz bittersweet chocolate chip
-6tbs unsalted butter
-3/4 tsp espresso
-4eggs ( seperated )
-pinch of salt
-1/3 cup light brown sugar
-1/2cup cake flour
-7oz semi sweet chocolate chip
-2tbs unsweetened choco powder
-1,1/2cup heavy cream(cold)
-1tbs white sugar
-pinch of salt
-1/2cup heavy cream(hot)
-6oz white choco chip
-1cup heavy cream(cold)
Step 2: 1st Layer
1st layer(oven-325f, 13-18min)
1.) grease and flour baking pan.
2.)melt chocolate chip and butter with espresso in a double boiler.
3.)set aside to cool.
4.)add 4egg yolks and vanilla on warm melted chocolate(not hot!). and mix until completely incorporated. set aside.
5.)whip egg whites with brown sugar and salt until soft peaks form and fluffy.
6.)gradually fold in egg whites and sift cake flour into the melted chocolate until completely incorporated.
7.)pour into baking pan, then tap and shake to remove air bubbles.
8.)put into oven and check with toothpick or fork if done.
9.) let it cool in a cooling rack then put into fridge to set.
Step 3: 2nd Layer
1.)mix hot water and chocolate powder.
2.)melt chocolate chips with liquid chocolate mixture in a double boiler. then set aside to cool.
3.)whip heavy cream with sugar and salt until soft peaks form and fluffy.
4.)gradually fold in whipped cream into the melted chocolate until completely incorporated.
5.)pour on top of the 1st layer, then shake and tap to remove air bubbles.
6.put to fridge to set.
Step 4: 3rd Layer
1.)mix gelatin and hot water.
2.)heat up 1/2cup heavy cream until it seamers.
3.) pour hot cream over white chocolate chip and mix until all is melted, then set aside to cool.
4.)whip 1cup of heavy cream and the gelatin mixture until soft peaks form and fluffy.
5.)gradually fold in whipped cream into the melted chocolate until completely incorporated.
6.)pour on top of the 2nd layer, then shake and tap to remove air bubbles.
7.)put to fridge to set.
Step 5: Decorate and Enjoy!
