  • 1 lbs of lean ground beef
  • 1 tablespoon olive oil
  • ½ cup red onion, chopped
  • 1 clove of garlic, minced
  • 1 can cream of mushroom soup low sodium
  • ½ cup low fat milk
  • 1 tablespoon of onion soup mix
  • Pinch of pepper
  • 1 cup of corn or mixed vegetable,frozen
  • 16oz of tater tots, enough to cover bottom layer
  • ½ shredded cheese
Preheat oven to 350 degrees F.

In a pan add the olive oil, along with the ground beef. Cook on medium heat until the meat becomes brown. While the meat is browning you can add in the onions and garlic.

In a pre greased casserole dish, mix together the cream of mushroom soup, milk, onion soup mix, pepper, and mixed vegetables. Set aside until the meat mixture is fully cooked.

Once the ground beef is fully cooked, drain any excess liquid. Add the beef to the casserole dish and mix together. Make sure the beef and soup mix are fully coated. Start to place the tater tots on the top of the beef mixture. Sprinkle with shredded cheese and pop it in the oven for 30 minutes. A good indication for when it’s done cooking, is when the cheese starts to melt and the soup starts to bubble. Take out of the oven let cool before you serve!

Sounds like a great dish, I don't like mushrooms but I'm sure any cream soup would work.. It's supposed to be chilly this weekend so this is going on the top of the to try list !

This has been a go-to dish in our house for years. The main difference is that I make it all in one cast-iron skillet.

Brown and drain the beef, cover with veg (we use french-cut green beans) and then the creamo soup and finally the tots. Put the whole pan straight in the oven.

I usually add the cheese last and pop it under the broiler for a minute or two. Comfort food FTW!
Sometimes there is just nothing better than a good old casserole dish!
