Make Chocolate Glaze
For the glaze, in a small saucepan, bring sugar, margarine, milk, and cocoa to a boil. Stir frequently; then reduce heat to a simmer for 2 minutes, stirring constantly. It'll look gloppy, but it's just the bubbles! Remove from heat and stir for another 5 minutes.

Add vanilla, stir, and immediately pour onto cake. Glaze dries really quickly, so spread it immediately and add any sprinkles now. Let this cool for an 1 hour, if you can wait that long!

Question on the glaze - can you use the same veg. oil since we are melting everything in a pot on the stove anyway? Or will it not have the right consistancy and harden correctly? I don't like the vegan margarines with "no trans fat" any better than that ones that have it, don't think it's healthy and was looking for something that would work with canola.

Well I tried it and it doesn't work well. The issue is that it has to be a vegan shortening that is solid at room temperature or else the texture is more like pouring Hershey's syrup over your cake! Still tastes good but difficult to handle. It made a good sort of vegan ice cream topping or maybe you could poke holes in the cake and pour this stuff inside for a more pudding-cake type texture. But not a good frosting or icing with veg. oil.

Carmen, try coconut oil. It is solid at around room temp (something like 76, but I can't remember exactly), so it might work like a solid fat.

i used this recipe (i added a little bit vanilin and cracked linseed, but it's not necessary). i baked it in a round pan, with baking paper. this cookie is very soft, so after it had been cooled down, i cut it carefuly , horizontaly with a very sharp knife. i put blackcurrant jam between the layers, and on the top. then, i poured liquid apple pectin on it. i made apple pectin myself, following these instructions: http://www.wildflowers-and-weeds.com/The_Forager/pectin.htm timing is important: apple pectin should be still liquid when the cookie is ready to pour it on. if pectin gets to be solid, you can solve it again, but it won't be so nice. pectin is like gelatine, but made from fruits, not animals. i think with this recipe i found the ideal birthday cake :)

I have made this cake many times for potlucks, etc. It doubles well and after it's baked and come to room temp. poke holes in it and pour amaretto in the holes. Then you can also make a tofutti cream cheese frosting and I use a coffee grinder to chop Trader Joe's candied pecans to sprinkle on top. Trust me you get rave reviews, and of course the usual, "Are you sure this is vegan?

OMG this is so good! So simple, which is why I tried it in the first place! So moist I didn't even use the glaze. Only thing, is I made it 2/3 C cocoa, because I like extra chocolate. People should definitely be trying this!
