HOW TO MAKE A WHITE CHOCOLATE & VANILLA MOCKINGJAY CAKE

Step 1: Red Mockingjay
For the red Mockingjay you'll need to create the body, wings and tail out of red fondant. To help, use an image of the Mockingjay to work off. Once you've created the Mockingjay, use a knife to create details on the body. To finish create a circle for the Mockingjay to go in.
Step 2: Vanilla Cake
400g / 1 and 2/3 cups Unsalted Butter
400g / 1 and 3/4 cups Caster Sugar
4 Large Eggs
400g / 3 and 1/4 cups All - Purpose Flour
2tbsp Vanilla Extract
4tsp Baking Powder
Beat the butter and sugar together before adding in the eggs one at a time. Mix the flour and baking powder together and sift into the mixture. Finish by adding the vanilla and milk. Separate the batter in two and bake at 175 degrees celsius for 30 minutes.
Step 3: White Chocolate Buttercream
225g / 1 Cup Unsalted Butter
375g / 3 Cups Icing Sugar
2tbsp Double Cream
2tsp Vanilla Extract
80ml Double Cream
200g White Chocolate + Extra 60ml Double Cream
Beat the butter and slowly add in the icing sugar. Pour the cream over the chocolate and melt in the microwave. Once the chocolate has cooled, pour the chocolate into the buttercream mixture. Add in the vanilla and remaining cream and beat for 10 minutes until light and fluffy. Once the cakes have cooled use the buttercream to frost the cakes.
Step 4: Red Flames
200g / 1 Cup Granulated Sugar
1tbsp Golden Syrup
60ml / 1/4 Cup Water
Red & Orange Food Colouring
Heat up the sugar, syrup and water in a saucepan until the mixture turns golden. Add the food colouring to the mixture and pour onto a baking sheet lined with greaseproof paper. Once dry, brake the sugar glass into pieces and apply to the side of the cake. Finish by placing your fondant Mockingjay on top of the cake.
