Introduction: The World's Best Chicken Quesadilla for Under 4 Dollars!

When I was growing up I was constantly making quesadillas because they were quick, easy and inexpensive to make, as well as being very delicious. A quesadilla is defined as a tortilla with melted cheese in the inside. But in addition to cheese there are several other ingredients that you can add into one to make it much better. Throughout the years my favorite ingredients are located in this recipe to make the best chicken quesadilla you will ever have!

The ingredients are relatively inexpensive and can be purchased at your local grocery store. The best part about this quesadilla is that it will cost you under four dollars to make! As well as it being inexpensive to make it also requires very little cooking experience so if this is your first time cooking, you will still be able to make one!

So if you want a simple lunch or dinner that I consider to be one of my favorites and you don't want to spend more than fifteen minutes making it, then I would recommend this recipe to anyone that would like to try the world's best chicken quesadilla!

Step 1: Ingredients Needed

First you will need to acquire the following ingredients to make the world's best chicken quesadilla. (Multiply everything by the number of quesadillas you would like to make)

For 1 Quesadilla:

* 1/2 Chicken Thigh
* 1 Tbsp. of Taco Seasoning
* 1 Large Flour Tortilla
* 3/4 Cup of Shredded Cheese (I Recommend Colby Jack)
* 1/4 Cup of Salsa
* 1/4 Cup of Sour Cream
* 1/4 Cup of Pico De Gallo with Black Beans and Corn
* 1 Cup of Shredded Lettuce
* 1 Tbsp. of Butter

Step 2: Cutting the Chicken

If you are using frozen chicken, make sure your chicken is fully thawed. Once your chicken is fully thawed rinse it off with cold water before preparing. Next, cut the chicken into bite able sizes, about the size of a quarter.

Step 3: Place Into a Non-Stick Frying Pan

Place your non stick frying pan onto the stove top. Set the temperature to medium-high. After a minute or two, your pan will be hot and ready, it's time to cook your chicken. Slowly pour the chopped chicken into the frying pan, along with sprinkling approximately one tablespoon of taco seasoning on top of the chicken.

Step 4: Cook the Chicken

Continue stirring your chicken to prevent it from sticking to the pan. (If your chicken begins to stick to the pan add 1/4 cup of water) Cook your chicken until it is golden brown, this will usually take 6-7 minutes. In order to see if the chicken is done, cut the largest piece in half to make sure it has been cooked thoroughly. The chicken will be the same color throughout the whole piece with no pink in the middle. If there is still pink in the middle, continue cooking until there is no pink remaining. When finished remove the frying pan and turn off the stove top.

Step 5: Butter Your Tortilla

Place one table spoon of butter on the top side of your tortilla. Spread the butter evenly so that it covers the whole side.

Step 6: Placing Tortilla in Frying Pan

Place a frying pan, which is large enough to fit the tortilla, onto the stove top. Turn the temperature on the stove to medium. Wait one or two minutes until the frying pan is hot. Place the buttered side of the quesadilla down onto the frying pan.

Step 7: Placing Chicken and Cheese on Tortilla

Take the 3/4 cup of shredded cheese and spread evenly on the right half of the tortilla. As soon as you place the cheese onto the tortilla take the cooked chicken and spread evenly on the same side as the shredded cheese.

Step 8: Removing Tortilla From the Frying Pan

Wait until the shredded cheese is melted on the top side of the tortilla then view the bottom side of the tortilla (the buttered side) by lifting up with a spatula and see if it has turned slightly brown. If it has not, then turn up the heat on the stove to medium-high and wait until it has become slightly brown. Once you have reached a desired crispiness (lighter brown for less crispy, darker brown for more crispy) remove from the frying pan and place onto a plate as well as turning off your stove.

Step 9: Applying Sour Cream

On the left side of your tortilla (the side without the cheese and chicken) evenly spread out the 1/4 cup of sour cream.

Step 10: Applying Salsa

On the same side as the sour cream evenly spread around the 1/4 cup of salsa with a spoon.

Step 11: Applying Pica-de-gallo

Add the 1/4 cup of pica-de-gallo to the same side. You should now have the sour cream, salsa, and the pica-de-gallo evenly spread out on the left side of the tortilla.

Step 12: Adding Shredded Lettuce

For the final ingredient, sprinkle the cup of shredded lettuce over the top of the entire tortilla.

Step 13: Folding Up Your Quesadilla

Finally fold your tortilla in half by taking the left side that has the salsa, sour cream, and pica-de-gallo and fold it on top of the side that has the chicken and the cheese. Press down firmly with a spatula so everything stays together. You can then cut your quesadilla into three equal sections if desired. (I usually eat it as it is)

Step 14: Enjoy!
