Introduction: The World's Finest Pecan, Oatmeal, Chocolate, Double Coconut Cookies
Got Fundraising Chocolate? I did, and I made The World's Finest (and Only) Pecan, Oatmeal, Chocolate, Double Coconut Cookies! It's made with these ingredients because it's what I had on hand. And if you're wondering why I had coconut flour on hand... it's because my husband buys gluten free ingredients for my baking experiments! And if you're wondering why I had two giant bags of oatmeal... well, what can I say? They were on sale at Costco!
They're GREAT! We discussed and it would be best served warm crumbled over vanilla ice cream. Hm... I wonder what it would taste like IN home made vanilla ice cream? Hm... hm... hm...

Step 1: Gather Your Ingredients
I didn't have to go shopping, but you might. Coconut flour is available in bulk from Whole Foods.
1 cup butter softened
1 1/2 cup brown sugar
2 eggs
2 tbsps and 1/4 c milk
2 tsps vanilla extract
1 3/4 cup coconut flour
1 tsp baking soda
1/2 tsp salt
3 cups instant oats
2 bars of Worlds Finest Chocolate (makes 1/2 cup)
1 cup chopped pecans
1 cup coconut
1 cup coffee made to taste (optional)
Step 2: Cream Together
1 1/2 c brown sugar
Use of an electric mixer is recommended as you will need to have the butter and sugar well mixed.
Have a sip of coffee.
Step 3: Beat In
2 eggs
Crack eggs one at a time into a bowl or container and add to mixture.
Step 4: Stir In
2 tbsps and 1/4 c milk
2 tsps vanilla extract
Add milk and vanilla extract and mix in. I used 1% milk.
Step 5: Combine Then Add 1/4 at a Time
1 3/4 cup coconut flour
1 tsp baking soda
1/2 tsp salt
Combine ingredients into a bowl then add 1/4 of the mix to the creamed ingredients.
Breathe deeply of the coconut flour aroma. So good!
Take a sip of coffee.
Step 6: Stir In
2 bars of Worlds Finest Chocolate
1 cup chopped pecans
1 cup coconut
The mix will be pretty stiff around this time, but it is possible to combine the ingredients!
Have a sip of coffee.
Step 7: Bake at 375 Degrees for 12 Minutes
Bake at 375 degrees for 12 minutes, then remove from oven. Do not disturb, or they will crumble. After cooled, use knife or spatula to remove. Note: They may still crumble after they are cooled, but they will be so good, and the crumble will be able to be eaten with Vanilla Ice Cream!
Have a sip of coffee, if there's any left.
